Cannabis Tuna Melt

A tuna melt is a classic lunchtime meal, and I thought it was really funny when Senator Kamala Harris decided to "school" Senator Mark Warner on how to properly make one on Instagram.

In honor of her Oakland roots, I made a cannabis version of one of her favorite meals...let's hope it's acceptable to the new Vice Presidential nominee!

INGREDIENTS
  • 1/3 c. cannabis mayonnaise (300mg THC)
  • 1/2 lemon, juiced
  • 2  (5-6-oz.) cans tuna, drained
  • 1 rib of celery, chopped
  • 1 dill pickle, chopped
  • 1/2 red onion, diced
  • 2 tbsp. chopped parsley
  • Salt
  • Ground black pepper
  • 8 slices brioche bread
  • 2 tbsp. butter
  • 1 tomato, sliced
  • 8 slices cheddar cheese

DIRECTIONS
  1. In a large bowl, whisk together cannabis mayonnaise & lemon juice.
  2. Drain tuna, use a fork to break up tuna into flakes and then add to mayonnaise mixture 
  3. Add celery, pickles, red onion, and parsley and toss to combine. Season with salt and pepper.
  4. Butter one side of each bread slice. Top an un-buttered side with 1/2 cup (2 ice cream scoops) of tuna salad, a slice of tomato, and 2 slices of cheese. Top with another slice of bread, buttered side facing up.
  5. Cook on griddle (or skillet) at medium heat for 3 minutes on each side.

Copycat Taco Bell Quesadillas...with Cannabis

On my latest YouTube binge, I came across Shane Dawson and Jeffree Star's channels and many hours later I had fallen for the the series the two had made about the business of makeup and their friendship. As a foodie, it really stood out to me just how much fast food and snacks Jeffree eats, lol! He's also a big cannabis advocate :-) 

So I saw Jeffree eat tons of Taco Bell across his videos, and I was inspired to make a recipe that marries two of his loves...weed and fast food! Check out this copycat Taco Bell quesadilla recipe, and tell me if you think it's "Jeffree Star Approved".

INGREDIENTS

SAUCE
  • 1⁄4 cup cannabis mayonnaise (200mg THC)
  • 3⁄4 teaspoon sugar
  • 1⁄2 teaspoon cumin
  • 1⁄2 teaspoon paprika
  • 1⁄8 teaspoon cayenne pepper
  • 1⁄8 teaspoon garlic powder
  • 1 dash salt

​QUESADILLAS
  • 4 flour tortillas
  • Green onion, diced
  • 4 chicken tenderloins (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey jack cheese
  • 2 slices cheddar cheese

DIRECTIONS

  1. Combine sauce ingredients and stir until smooth.
  2. (optional) Saute chicken in vegetable oil and slice thinly.
  3. Preheat griddle or skillet to medium heat.
  4. Lay tortilla on hot griddle (or skillet) and sprinkle with 1/4 cup of each shredded cheese and 1/2 cheese slice on one side of the tortilla.
  5. Top with green onion (and/or chicken) on the same half covered with cheese.
  6. On the other side, spread about one tablespoon of sauce.
  7. Fold over, and press gently with spatula.
  8. Cook 2-3 minutes per side, or until cheese is melted.

Cannabis Mayonnaise

One of best ways to infuse as many recipes as possible, is to learn to infuse what I call the "basics". The basics are versatile ingredients that can be used in a multitude of recipes once you've made and infused them.

Mayo is one of my favorite basics because it can be used to make dressings, sauces, sandwiches, deviled eggs, etc.

Check out this easy peasy recipe for making your own homemade cannabis mayo!

INGREDIENTS

  • 1 egg yolk
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 2 pinches sugar
  • 2 teaspoons lemon juice
  • 1 tablespoon white wine vinegar
  • 1 cup cannabis olive oil (mine has 8g cannabis buds)

DIRECTIONS
  1. In a glass bowl, whisk together egg yolk and dry ingredients.
  2. Combine lemon juice and vinegar in a separate bowl then thoroughly whisk half into the yolk mixture.
  3. Using an immersion blender (or hand whisk), begin blending by starting to add the cannabis olive oil a few drops at a time until the liquid seems to thicken and lighten a bit. Once you reach that point you can increase the oil flow to a constant (thin) stream. Once half of the oil is in add the rest of the lemon juice mixture.
  4. Continue blending (or hand whisking) until all of the oil is incorporated.
  5. Leave at room temperature for 1 to 2 hours then refrigerate for up to 1 week.

Summer Pasta Salad

Now that we're in the heat of summer, I always like to eat lighter foods that are easy to prepare ahead of time. I also love a good pasta salad for a family BBQ. I hope you you enjoy this one!

INGREDIENTS
  • 1 bag La Liberta Cannabis Rigatoni, cooked 
  • 1 1/2 - 2 cups diced grape (or cherry) tomatoes
  • 1 cup fresh mozzarella, bite sized
  • 1/4 cup fresh basil, chopped 
Seasoned Dressing
  • 1/2 cup olive oil (optional canna-oil for more infusion)
  • 1/2 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1 tsp salt
INSTRUCTIONS
  1. Mix seasoned dressing ingredients together in a small bowl. Set aside.
  2. Cook pasta according to package directions, and drain
  3. Toss pasta with olive oil mixture. Set aside to let cool.
  4. Chop tomatoes into small pieces.
  5. Chop fresh basil.
  6. When pasta is cool, add mozzarella, tomatoes, and basil to the pasta, and stir together.
  7. Serve immediately, or refrigerate covered for later

This serves 4-6, and the approximate dosage will be 16-25mg THC per serving.

Bucatini all'Amatriciana

Ingredients
  • 2 Tbsp. extra-virgin olive oil
  • 4 oz. thinly sliced pancetta, or chopped bacon
  • 1/2 tsp. crushed red pepper flakes
  • 1/2 tsp. freshly ground black pepper
  • 3/4 cup minced onion
  • 2 cloves garlic, minced
  • 1 28-oz. can peeled tomatoes with juices, crushed by hand t
  • Kosher salt
  • 16 oz. La Liberta cannabis bucatini
  • 1/4 cup finely grated Parmesan cheese (about 1 oz.)

Directions
  1. ​Heat oil in a large heavy skillet over medium heat. Add pancetta and sauté until crisp and golden, about 4 minutes. Add pepper flakes and black pepper; stir for 10 seconds. Add onion and garlic; cook, stirring often, until soft, about 8 minutes. Add tomatoes, reduce heat to low, and cook, stirring occasionally, until sauce thickens, 15-20 minutes.
  2. Meanwhile, bring a large pot of water to a boil. Season with salt (optional); add the pasta and cook, stirring occasionally, until 2 minutes before al dente. Drain, reserving 1 cup of pasta cooking water.
  3. Add drained pasta to sauce in skillet and toss vigorously with tongs to coat. Add 1/2 cup of the reserved pasta water and cook until sauce coats pasta and pasta is al dente, about 2 minutes. (Add a little pasta water if sauce is too dry.) Stir in cheese.​

Cheesecake Pie Bites

INGREDIENTS

Filling
  • 2 (8oz) packages cream cheese, softened
  • 1 C sugar
  • 1 Tsp vanilla extract
  • 2 Cans of refrigerated crescent rolls
 
Cannabis Crumble
  • 3/4 C sugar
  • 1 Tsp ground cinnamon
  • 1/2 C cannabis butter, softened

DIRECTIONS
  1. Preheat an oven to 350 degrees. Prepare a 9x13 inch baking dish with parchment paper and/or cooking spray.
  2. Beat the cream cheese with sugar and vanilla extract in a bowl for 1-2 minutes or until smooth.
  3. Unroll the crescent roll dough, and use a rolling pin to stretch to size of pan. Press one piece into the bottom of baking pan. Evenly spread the cream cheese mixture into the baking pan, then cover with the other piece of crescent dough.
  4. Stir remaining sugar, cinnamon, and cannabis butter. Crumble the mixture over the top of the cheesecake.
  5. Bake about 30 minutes. Remove from the oven and cool completely in the pan before cutting into 24 pieces.

Summer Salad w/ Cannabis Vinaigrette

INGREDIENTS
  • Fresh baby spinach
  • Fresh strawberries, sliced
  • Sliced almonds
  • Grilled chicken, sliced
  • Poppyseeds
  • 1/2 C Cannabis olive olive
  • 1/4 C Balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 shallot, diced
  • 1/2 tsp minced garlic
  • salt & pepper to taste

DIRECTIONS
  1. Combine the olive oil, balsamic vinegar, shallots, honey, mustard, garlic, salt and pepper in dressing shaker or mason jar and shake vigorously; set aside.
  2. Slice strawberries.
  3. Toss salad ingredients and toppings with prepared dressing.

CBD Brownies

INGREDIENTS
  • 1/2 C CBD butter, melted
  • 1 C sugar
  • 1 tbsp vanilla extract
  • 2 eggs
  • 1/2 C flour
  • 1/3 C organic cacao powder
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • Nuts (optional)

DIRECTIONS
  1. ​Preheat oven to 350 degrees F, and line square pan with parchment paper and cooking spray.
  2. In a saucepan, melt CBD butter, and stir in sugar. 
  3. Pour into mixing bowl, and add eggs and vanilla.
  4. Beat in cacao, flour, salt, and baking powder.
  5. Spread batter into prepared pan, and top with nuts (optional).
  6. Bake in preheated oven for 25 to 30 minutes.

Pulled Pork Poutine

I created this recipe specifically with migraine sufferers in mind. I have personally been affected by chronic migraine for over a decade with symptom onset occurring when I was pregnant with my daughter. I infused this particular recipe with the Redd Cross strain of cannabis as it is great for pain, as well as nausea, which I sadly also suffer from during migraine attacks. The recipe is made with the herbal powerhouse, turmeric, which is a great anti-inflammatory food if taken at about 1-2 teaspoons a day.
INGREDIENTS

1 bag frozen fries (your favorite)
1lb pulled pork
1 1/2 cups water
1 tbsp beef bouillon
1/4 C all-purpose flour
1 onion, chopped
1/4 cup cannabis butter
4 tsps ground turmeric
1 tsp ground black pepper
4 slices of white cheddar cheese
4 au gratin dishes

DIRECTIONS

1. Bake fries in 450 degree oven for 15 minutes
2. Place cannabis butter and flour in pot on medium heat until well blended, then add onions, bouillon, water
    and spices.
3. Cook gravy mixture on low heat for 3-5 minutes or until thickened.
4. Separate fries into 4 portions, and place in au gratin dishes. 
5. Top fries with 4oz of pulled pork, then ladle about 1/4 cup of gravy on top.
6. Finally, place a slice of cheese on top of the gravy.
7. Bake for 10 minutes on 400 degrees.

RIPPLE Pudding Pops!

INGREDIENTS
  • 1 box cheesecake pudding mix
  • 2 C milk (any kind)
  • 3 packets of Ripple Pure 10
  • 1/2 C whipped cream
  • 1 C chocolate chips, melted
  • 1/2 C pecan chips
  • 1/4 C caramel chips, melted
TOOLS
  • ​​Popsicle Molds

DIRECTIONS
  1. Whisk Ripple powder into milk, and mix pudding and milk for 2 minutes.
  2. Fold in whipped cream gently.
  3. Fill molds with pudding mixture, and set sticks.
  4. Freeze pops for 4-6 hours.
  5. Run pops under hot water for 10 seconds to release from molds.
  6. Dip pops in melted chocolate, and roll in pecan chips.
  7. Finally, drizzle pops with melted caramel.
