Cannabis-Infused Adobo Mahi Mahi

I am a huge seafood fan, and I realized that I hadn't shared an infused seafood recipe in a while, so I'm hoping you guys like this spicy citrus one with one of my favorite fish, mahi mahi!​

INGREDIENTS

  • 4 Mahi mahi fillets, patted dry with paper towel
  • 1/2 Tbsp Salt
  • 4 Tbsp Adobo seasoning
  • 2 Tbsp Cannabis butter (100mg THC)
  • 1-2 Tbsp Avocado oil
  • 1 Lemon
DIRECTIONS

  1. Heat cast iron skillet on medium-high heat, just to when it begins to smoke.
  2. Season fillets with salt, then coat with adobo seasoning and press into the fish with hands.
  3. Add cannabis butter and enough oil to coat the bottom of the skillet, and add fillets once butter is melted.
  4. Cook fillets, undisturbed, for 3-5 minutes, then flip and continue cooking for an additional 2-4 minutes until fish turns opaque color.
  5. Finally squeeze lemon to cover mahi mahi with juice, and serve.

Cannabis Tuna Melt

A tuna melt is a classic lunchtime meal, and I thought it was really funny when Senator Kamala Harris decided to "school" Senator Mark Warner on how to properly make one on Instagram.

In honor of her Oakland roots, I made a cannabis version of one of her favorite meals...let's hope it's acceptable to the new Vice Presidential nominee!

INGREDIENTS
  • 1/3 c. cannabis mayonnaise (300mg THC)
  • 1/2 lemon, juiced
  • 2  (5-6-oz.) cans tuna, drained
  • 1 rib of celery, chopped
  • 1 dill pickle, chopped
  • 1/2 red onion, diced
  • 2 tbsp. chopped parsley
  • Salt
  • Ground black pepper
  • 8 slices brioche bread
  • 2 tbsp. butter
  • 1 tomato, sliced
  • 8 slices cheddar cheese

DIRECTIONS
  1. In a large bowl, whisk together cannabis mayonnaise & lemon juice.
  2. Drain tuna, use a fork to break up tuna into flakes and then add to mayonnaise mixture 
  3. Add celery, pickles, red onion, and parsley and toss to combine. Season with salt and pepper.
  4. Butter one side of each bread slice. Top an un-buttered side with 1/2 cup (2 ice cream scoops) of tuna salad, a slice of tomato, and 2 slices of cheese. Top with another slice of bread, buttered side facing up.
  5. Cook on griddle (or skillet) at medium heat for 3 minutes on each side.

Summer Salad w/ Cannabis Vinaigrette

INGREDIENTS
  • Fresh baby spinach
  • Fresh strawberries, sliced
  • Sliced almonds
  • Grilled chicken, sliced
  • Poppyseeds
  • 1/2 C Cannabis olive olive
  • 1/4 C Balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1 shallot, diced
  • 1/2 tsp minced garlic
  • salt & pepper to taste

DIRECTIONS
  1. Combine the olive oil, balsamic vinegar, shallots, honey, mustard, garlic, salt and pepper in dressing shaker or mason jar and shake vigorously; set aside.
  2. Slice strawberries.
  3. Toss salad ingredients and toppings with prepared dressing.
