Cannabis Tuna Melt

A tuna melt is a classic lunchtime meal, and I thought it was really funny when Senator Kamala Harris decided to "school" Senator Mark Warner on how to properly make one on Instagram.

In honor of her Oakland roots, I made a cannabis version of one of her favorite meals...let's hope it's acceptable to the new Vice Presidential nominee!

INGREDIENTS
  • 1/3 c. cannabis mayonnaise (300mg THC)
  • 1/2 lemon, juiced
  • 2  (5-6-oz.) cans tuna, drained
  • 1 rib of celery, chopped
  • 1 dill pickle, chopped
  • 1/2 red onion, diced
  • 2 tbsp. chopped parsley
  • Salt
  • Ground black pepper
  • 8 slices brioche bread
  • 2 tbsp. butter
  • 1 tomato, sliced
  • 8 slices cheddar cheese

DIRECTIONS
  1. In a large bowl, whisk together cannabis mayonnaise & lemon juice.
  2. Drain tuna, use a fork to break up tuna into flakes and then add to mayonnaise mixture 
  3. Add celery, pickles, red onion, and parsley and toss to combine. Season with salt and pepper.
  4. Butter one side of each bread slice. Top an un-buttered side with 1/2 cup (2 ice cream scoops) of tuna salad, a slice of tomato, and 2 slices of cheese. Top with another slice of bread, buttered side facing up.
  5. Cook on griddle (or skillet) at medium heat for 3 minutes on each side.

Copycat Taco Bell Quesadillas...with Cannabis

On my latest YouTube binge, I came across Shane Dawson and Jeffree Star's channels and many hours later I had fallen for the the series the two had made about the business of makeup and their friendship. As a foodie, it really stood out to me just how much fast food and snacks Jeffree eats, lol! He's also a big cannabis advocate :-) 

So I saw Jeffree eat tons of Taco Bell across his videos, and I was inspired to make a recipe that marries two of his loves...weed and fast food! Check out this copycat Taco Bell quesadilla recipe, and tell me if you think it's "Jeffree Star Approved".

INGREDIENTS

SAUCE
  • 1⁄4 cup cannabis mayonnaise (200mg THC)
  • 3⁄4 teaspoon sugar
  • 1⁄2 teaspoon cumin
  • 1⁄2 teaspoon paprika
  • 1⁄8 teaspoon cayenne pepper
  • 1⁄8 teaspoon garlic powder
  • 1 dash salt

​QUESADILLAS
  • 4 flour tortillas
  • Green onion, diced
  • 4 chicken tenderloins (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey jack cheese
  • 2 slices cheddar cheese

DIRECTIONS

  1. Combine sauce ingredients and stir until smooth.
  2. (optional) Saute chicken in vegetable oil and slice thinly.
  3. Preheat griddle or skillet to medium heat.
  4. Lay tortilla on hot griddle (or skillet) and sprinkle with 1/4 cup of each shredded cheese and 1/2 cheese slice on one side of the tortilla.
  5. Top with green onion (and/or chicken) on the same half covered with cheese.
  6. On the other side, spread about one tablespoon of sauce.
  7. Fold over, and press gently with spatula.
  8. Cook 2-3 minutes per side, or until cheese is melted.

Cannabis Mayonnaise

One of best ways to infuse as many recipes as possible, is to learn to infuse what I call the "basics". The basics are versatile ingredients that can be used in a multitude of recipes once you've made and infused them.

Mayo is one of my favorite basics because it can be used to make dressings, sauces, sandwiches, deviled eggs, etc.

Check out this easy peasy recipe for making your own homemade cannabis mayo!

INGREDIENTS

  • 1 egg yolk
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 2 pinches sugar
  • 2 teaspoons lemon juice
  • 1 tablespoon white wine vinegar
  • 1 cup cannabis olive oil (mine has 8g cannabis buds)

DIRECTIONS
  1. In a glass bowl, whisk together egg yolk and dry ingredients.
  2. Combine lemon juice and vinegar in a separate bowl then thoroughly whisk half into the yolk mixture.
  3. Using an immersion blender (or hand whisk), begin blending by starting to add the cannabis olive oil a few drops at a time until the liquid seems to thicken and lighten a bit. Once you reach that point you can increase the oil flow to a constant (thin) stream. Once half of the oil is in add the rest of the lemon juice mixture.
  4. Continue blending (or hand whisking) until all of the oil is incorporated.
  5. Leave at room temperature for 1 to 2 hours then refrigerate for up to 1 week.
